1.整鸡洗干净,并剁成同样大小的块状。把土豆去皮并切成滚刀块,不要太薄,用清水冲掉土豆的淀粉。青椒切成大小差不多的斜块。生姜切成片状。大蒜瓣拍烂。大葱切成段状。2..把油倒入锅中,等油热后将花椒下锅,炸出香味后捞出。将白砂糖下锅并慢慢搅动,到白砂糖烧化出现焦黄色。3.将鸡块倒入锅内,并大火翻炒片刻。将生姜、朝天椒下锅与鸡一起翻炒,直到锅中没有水分,鸡块被油炸得出现金黄色。加入豆瓣,再加入适当的食盐,快速翻炒几下,将豆瓣与盐翻匀。倒入啤酒在锅中,并烧开。4.将土豆倒入锅中,并与鸡块拌匀,先用大火炖六七分钟,然后加入宽粉用小火炖十几分钟。等土豆宽粉炖软时,下葱并翻匀。5.大约1分钟后,放入味精和大蒜,拌匀后就可以出锅。
